Guam, the largest and southernmost island of the Mariana archipelago, is the westernmost possession of the United States, and has been since 1898. The island is approximately 6,000 miles west of San Francisco; 3,700 miles west-southwest of Honolulu; 1,500 miles southeast of Tokyo; 2,100 miles southeast of Hongkong; 1,500 miles east of Manila; and 3,100 miles northwest of Sydney at 13 north latitude and 144 East longitude. The Marianas Trench, the deepest known ocean depth (-39,198 ft.), is located southeast of Guam.

Most of us are unaware that Micronesia is a vast geographical North Pacific Ocean area covering more than 3 million square miles, about the physical size of the United States, and is home to some 300,000 people (excluding Guam) living on 2,100 islands. Together they total just 717 square miles of land (excluding Guam). They are places defined by the sky and the sea, with cultures traditions that over thousands of years adapted brilliant ways of surviving and navigating between each island. Limas Governor and the clergy entrusted the treasure to Thompson and his ship “Mary Dear” who in return killed the guards and sailed off to Cocos Island. There is even a third load, belonging to Edward Davis, Captain of John Cook’s ship, the “Bachelor Delight” who left behind some loot in the late 1600’s.

The time of treasure hunts are gone, but the real treasure of Cocos Island is not, as the islands real treasure is its unique ecosystem – the flora and fauna not found elsewhere in the world. Today Cocos Island is the most sacred place in Costa Ricas extensive Park System. You need a very good reason to get permission to visit the Island. Seasonal diving trips are organized to Cocos. Cocos Island is a small island located about one mile off of the southern tip of Guam. Cocos Island Guam is sometimes confused with the Australian territorial Cocos Keeling Island, but they are in fact many miles apart. Cocos Island Guam is a popular place for visitors to escape for a day to shop, fish, snorkel and hang out on the beach. Cocos Island Guam is one of the many great reasons to take a vacation to Guam and provides beautiful views for any trip.

Cocos Island history retains an element of mystery as some continue to search for treasure lost at the ocean bottom near Cocos Islands.

While modern day tourists may not be looking for sunken treasure, there is still plenty to do on Cocos Island. Due to its proximity to places on Guam and popularity among visitors, two large boats continually shuttle locals and tourists back and forth between a dock in the village of Merizo on Guam and Cocos Island. Buses are constantly lined up on both sides of the water dropping off tour groups Of the many activities to enjoy on Cocos Island, Cocos Island diving is perhaps the most popular. The long reef off the coast of Cocos Island that created so much trouble for the Spanish traders continues to draw gorgeous tropical fish, octopi and other sea life. The warm, clear waters and consistent temperatures near Cocos make Cocos Island ideal for divers of every skill level. Cocos Island diving tours can be arranged on Guam or at the main resort on Cocos Island once you have arrived. Although last minute Cocos Island diving trips can be arranged, it is highly recommended that you book your tour well in advance to get the best rates.

Eggplant with Spicy Coconut Cream:

4 to 6 long green or purple eggplants
4 green onions (scallios)
1 or 2 small Guam peppers or similar
1/2 cup lemon juice
1 to 1 1/4 cup coconut milk
salt to taste

Procedure: Wash eggplants, poked with forks to allow heat to enter evenly through eggplant; grilled over a barbecue grill or on a flat griddle stovetop. When skin turns black and eggplant becomes soft, place in a bowl of cold water—about 5 minutes; once cool, peel skins carefully and place eggplants in another bowl. Take a fork and gently split eggplants lengthwise. Wash off green onions and chop finely; add to the eggplant. Repeat the same procedures with the peppers. Add lemon juice; the juice of fresh lemons is preferred. Add coconut milk—coconut milk from freshly grated coconuts is the best. Add salt to taste. Your taste buds will let you know if the lemon juice and coconut milk are not blended where you need to add a little of either to bring out that tangy and sweet delicacy of the coconut milk.

Beef with Coconut Milk:

3 tbsp extra virgin olive oil
2 cloves garlic, minced
1 medium onion, chopped
2 pounds flank, round or sirloin steak cut into 1/2 –inch strips
3 tbsp of soy sauce
1 cup water
Juice of a lemon and a half
2 cups coconut milk
1 cup cherry tomatoes (red and green), cut in half
2 cups of string beans, cut in 2-inch lengths
1 cup fresh spinach, whole
salt and pepper to taste

Procedure: Add the extra virgin olive oil to deep skillet and turn stove on high. As the skillet heats, add garlic (do not brown) and onions; stir and cook about 2 minutes. Add the steak and a generous sprinkling of black pepper, stirring and cooking for 2 minutes. Add and mix vegetables with meat ingredients. Add soy sauce and lemon juice, stirring, adding water. Lower to medium heat; simmer for 4 minutes or when string beans are done but not overdone. Add salt, stir and then coconut milk.Turn on high and bring the liquid to boiling point—turn the heat down to low. Let it simmer for 3 minutes. Turn off heat. Eat with rice — the richness and texture of the coconut milk truly make this dish very tasty — mangge (delicious).
